No Signboard Seafood Restaurant, Geylang

We had a little budget left for our February L.A. allowance, so I called for an impromptu L.A. Dinner at No Signboard Seafood at Geylang. Despite the late notice and the fact that the dinner was scheduled on a Friday evening, a good number of us still turned up! I guess we really are a firm of food lovers.

Instead of the usual chili or black pepper varieties of crabs, I ordered the more unusual but very in-vogue Salted Egg Yolk Crabs ($42 per kg). This was lip-smackingly delicious. The sandy texture and rich flavour of salted egg yolks somehow complemented the natural sweetness of the Sri Lankan crab. I liked that cubes of salted egg whites were added for extra saltiness. The gravy was wetter and creamier than other versions I've tried. We practically licked the plate clean.

We also got the signature dish of White Pepper Crabs ($42 per kg), which had a nuanced heat compared to its black pepper sister. I actually think I prefer this flavour as it brings out the delicate sweetness of the crab meat. We also lapped up the slurpilicious gravy.

I also ordered Steamed Fresh Prawns ($40), which were amazingly fresh, firm and sweet. Shell them, dip them into a thick black soy and sliced chili sauce, and you're good to go!

Next up was the Scallops with Vegetables ($20 for medium portion). The delicate seasoning and light sauteing enhanced the succulent and juicy scallops. This was also finished in minutes.

The Grouper Steamed Hongkong Style ($60 per kg) arrived next. The fish was fresh, flaky and naturally sweet, and paired with the light soy sauce, heaven on the tastebuds.

The Fish Maw with Seafood Soup ($40 for medium portion) was such a comforting tummy warmer. Thick and rich seafood broth with fish maw and smooth beancurd for texture and chock full of premium seafood like prawns, scallops and egg drops.

There was also carbs, in the form of my favourite Braised Yee-fu Noodles ($12 for medium portion). The noodles were flavourful, slippery and soft, a really satisfying way to finish up the meal.
