Garlic Butter Shrimp and Arugula Salad

We had some leftover shrimp, and greens, so I threw them together for a quick-mix salad.


Ingredients (feeds 4):
150gm arugula leaves
20 shrimp, deshelled and deveined
3 cloves garlic, minced
1 tbsp butter
salt
pepper
1/2 cup grated truffle pecorino (parmesan or grana padano will do too)


Directions:
1) Fry shrimp in garlic, butter, and season with salt and pepper.

2) Dish up, and assemble with arugula and top with grated cheese.
