Whiskey-Soy Marinated Roasted Chicken
Roasted chicken is one of my most versatile recipes, like stew. It can be done a million ways, depending on the marinade. And, as long as you've marinated the meat overnight, roasting it is the quickest thing to do. Just take it out of the fridge, and pop it into the oven, and before you know it, it's done!
Ingredients (feeds 5-8 persons):
10 chicken thighs (apportion about 1-2 pieces per person)
1 cup whisky
1/2 cup brown sugar
1/2 cup olive oil
2 tsp fresh minced garlic
1/2 cup soy sauce
1 tsp salt
1 tbsp freshly milled black pepper
Directions:
1) Whisk marinade till sugar and salt are completely dissolved.
2) Pour marinade over chicken and leave overnight in fridge, or at least 6 hours.
3) Roast at 220C, for 20-25 minutes skin-side down, before flipping over to roast for another 15-20 minutes till golden brown and sizzling.
