Butter Kimchi Fried Rice with Jamon Iberico

우후후후후 곧 예방 접종은 할 수 있어요!! 

아마도 올해 연말에 여행 할 수 있는데 결혼 10 주년을 축하하기 몰디브로 돌아가자. 우리가 몰디브에서 신혼 여행을했기 때문에 돌아가는 것은 특별 할 것이라고 생각해. 

하지만 코로나에 달려 있어. 그리고 여행 제한에 달려 있어. 우리는 여행 할 필요가 없어. 우리는 여행을 간절히 하치 않아. 

싱가포르 사람들은 여행 할 수 없다는 것에 너무 화가났는데 나는 공감할 수 없어. 싱가포르 사람들이 여행 할 수 없서 불평하는 방식으로 말하자면 싱가포르가 감옥 인 것 같아. 

버릇없고 불평 좀 그만해. 우리 모두 싱가포르에서 살고 있는데 벌써 너무 행운이죠. 우리의 삶은 벌써 아주 평범해. 특히 다른 나라에 비해. 

그래서 조금만 기다려 보고 세상이 정상으로 돌아오 겠어요. 화이팅!

We don't eat a lot of white rice in this household. The smallest bag of Thai Hom Mali rice (some generic supermarket house brand because I'm cheap AF #ButAlsoLowSES) lasts more than 2 years in our pantry. Thanks to a slowed metabolism attributed to middle age aunty-dom, we've had to cut down on refined carbs. So when we do eat white rice, we try to make it worthwhile:- go all out and make it flavoured white rice...because why eat plain white rice when you can indulge in greasy salty and totally scrummy chicken rice instead?  

So...the said bag of jasmine rice was just about a fingerbreadth past its expiry date, and a deep delve into the fridge unearthed a packet of kimchi that looked dangerously bloated, as well as a knob of precious fancy butter that was just a hair away from expiration too. With a dinner plan formulated to make kimchi butter fried rice, I made a quick jaunt to the market for some protein because I wasn't really feeling like luncheon meat: and hauled back some sweet corn and Spanish jamon. 


Ingredients (feeds 4):

400gm fresh kimchi
3 tbsp-heaps gochujang
1 tbsp ssamjang
2 knobs butter
160gm corn kernels
200gm jamon
5 cups cooked rice
1 large yellow onion, minced
3 cloves garlic, minced
1 tbsp canola oil
seaweed for garnishing


Directions:

1) Fry onions in pre-heated wok with 1 tbsp canola oil on medium-high heat until translucent, about 3 minutes.

2) Add garlic, toss about for 1 minute.

3) Add butter, melt through.

4) Add kimchi, toss about for about 3 minutes.

5) Add gochujang and ssamjang, mix through.

6) Add corn, saute for about 2 minutes.

7) Add rice, toss through.

8) Add jamon, toss through. 

9) Serve with a sprinkle of shredded seaweed.
