Pura Brasa

============================   I struggled when writing about this. In recent times, I've tried to be kind(er) to the eateries I review. F&B is already a notoriously unforgiving industry, and with the relentless pandemy onslaught, I try as best I can to extend a little more compassion to the restaurants currently battling the dining restrictions. And so I've either refrained from blogging about places that just aren't...

Pim Pam by FOC

Image
The space previously tenanted by the dreadfully middling Bodega Y Tapas has been taken over by a new Spanish outfit. A Barcelona-styled tapas and wine bar, Pim Pam is an offshoot of the excellent FOC . As expected, the food at Pim Pam was superb. There are a few dishes unique to Pim Pam that aren't available at its FOC sisters , so get those. Service was cheerful and attentive, and we particularly liked that our cherubic baby-faced chef made the effort to personally interact with us diners. A must-try was the Pim Pam Trinxat ($16), a mash potato patty laced with savoy cabbage and pork nubbins, and sided by a fried egg, roasted pork belly and crispy kale. I love everything on this plate, on their own, and with each other. Pim Pam offers 2 novel variations of their stellar Croquetas , one with sweet Crab ($5) topped with aioli and romesco, and a vegetarian one studded with Spinach & Pine Nuts ($4). Absolutely smashing. The pan-fried Barramundi San Sebastian Sty...

FOC by Nandu Jubany, Hongkong Street

So I finally made it back to FOC , to celebrate a girlfriend's birthday. We made it a women'only affair, so we could ogle freely (because, no husbands) at the hotties at work behind the open-concept kitchen.  The menu's been refreshed, and slightly extended, but the food's still delicious. The restaurant's just as buzzy, and crazy popular as before, so be sure to make reservations before going down. The Sauteed Cauliflower ($14) with pine nuts, grated cheese, pesto and spring onions, was delicate and restrained. A refreshing starter, the Watermelon Gazpacho ($12) was made creamy with smoked olive oil ice-cream. A special of the day, the Avocado Gazpacho ($20) was sweetened with sweet prawns and caviar. Beautiful silky ribbons of Iberico Ham ($30). Which perfectly married the Toasted Bread with Tomatoes ($9.60). A favourite of mine, the Open Tortilla ($26), almost crepe-like, was loaded with peppers and iberico ham. An East-West ...

FOC, Sentosa

Image
Popular Spanish outfit FOC recently opened a branch in Sentosa , just down the beach from Tanjong Beach Club. Weekends will find the bistro teeming with beach bunnies and sun-worshippers glistening with oodles of suntan lotion, but FOC Sentosa on a weekday afternoon is different creature entirely. It's tranquil and laidback, with only the sandflies (and occasional bee) buzzing about, a perfect little coastal getaway far from the madding crowd. Spanish tapas here are outstanding, and while you don't get counter seats here to ogle at the hottie chefs at work (*makes mental note to dine with galfrens at the bar stools of their city centre outlet*), the ample space is bright and cheery, and scenic enough to not miss the bar action.  A failsafe, classic starter, the Jamon Iberico ($30) was absolutely lovely. Silky in texture with a robust salty pungency. The Beetroot Gazpacho ($12), thickened with olive oil ice-cream and made chunky with diced root vegetables, was rich b...
