PAUL, Paragon
We've always thought PAUL was strictly a boulangerie/patisserie, but it turns out, they do pretty decent salads as well. And because it's just off the elevator lobby linking up to the Fitness First gym, a refueling break here after a grueling workout is perfectly wholesome nutrition.
The Salad Nicoise ($19.90) was a refreshing melange of seared tuna loin, hard boiled eggs, tomatoes, cucumbers, mesclun, and black olives.
For those preferring a pure vegetarian option, I'd suggest the Salade Champignons Sautes ($18.90) of mesclun studded with sauteed white button mushrooms, grilled asparagus, cherry tomatoes, and parmesan shavings.
A sweet but still healthy hydrator, the Lemongrass Tea ($7.50) was fragrant and nuanced.
