Braised Assorted Vegetables (Luo Han Zhai) is a vegetarian festive favourite during the Lunar New Year. It's traditionally eaten on the first day of Chinese New Year when one's supposed to refrain from eating meat as a form of self-purification.

I've always liked the delicate sweetness and different textures of the various vegetables used in the dish. Crystal Jade Kitchen does a fantastic version of this Braised Vegetarian Claypot ($12.80) with homespun goodness.


There must be close to 10 different vegetables used in this dish, black fungus, white fungus, baby white cabbage, shitake mushrooms, lily buds, beancurd skin, white button mushrooms, glass vermicelli, black Chinese mushrooms, carrots, and bamboo shoots. All these are simply seasoned with a dash of soy and oyster sauce and simmered over a low fire to bring out the natural sweetness of the greens.
