Skinny Pizza, Raffles City
Purists will likely hate on Skinny Pizza, the Spa Esprit Group's localised take on traditional Italian pizzas. But this pizzeria, with their double-layered, ultra thin papadom crust, and lack of a sinful mozzarella blanket, is a godsend to the carb-averse and dieters. Their low-fat, low-carb, high-fibre pizzas probably explains the largely female demographic when I had dinner with my girlfriends last night.
In addition to pizzas, Skinny Pizza serves up a decent range of pastas and risottos, all of which are pretty commendable.
Although I'm not a big fan of squid ink, the Squid Ink Pizza ($29) here at Skinny Pizza was pretty delicious. The distinctive taste of squid ink was kept to a minimum, sparkling fresh prawns and squid were baked to perfection, soft with the slightest bit of chew. Piquant tomato salsa, peppery arugula, and raw onions kept this enlivened.
The Black Pepper Prawn Linguine ($32) comprised slightly overdone pasta tossed in a spritely pepper sauce, textured by diced sauteed prawns, finished with a humongous butterflied prawn grilled to a fragrant, smoky char. Fresh tomato dice kept this from being too heavy.
The Mushroom Risotto ($20) was very hearty but not cloying, choc-ful of assorted wild mushrooms, and topped with Parmesan shavings. Please note that they automatically add parsley to this, so be sure to ask for the kitchen to hold off the parsley if you're, like me, averse to it.
