Kanshoku Ramen Bar, Orchard Gateway

We haven't had ramen for some time, what with our low-carb diet in order to get bikini-ready for Summer. So we save our carb-quota for truly worthwhile gems. Like the amazing truffle ramen at Kanshoku Ramen, a young-ish kid on the Orchard block. I know truffle is like so passe these days, but I'll forever be nutters over the pungent fungi.

Situated on the first floor of the oft-overlooked Orchard Gateway, the open-concept stall gets a fair bit of foot traffic flowing from the 313 Somerset connector. Peak dining periods will see Kanshoku Ramen brimming with the teeny bopper set, but turnover is fast, and service, efficient.

The menu's decidedly limited, but what they lack in variety, they make up for it in quality. The pork-bone tonkotsu base at Kanshoku is rich in depth and nicely balanced, if a tad unremarkable. The real highlight is the dry-style truffle ramen, a modern spin on the local "mee pok tar" if you will. They do a soupy rendition as well, but the dry one is the star; you'll do well to order a bowl, or two, of scrumptious goodness.

A must-try and a signature here, the Black Truffle Ramen ($16.90) centered around an Ajitama ($2) was sublime. Served tepid, the thin chewy noodles were warmed by the runny egg (poke it and swirl it through for the full effect). This was intoxicatingly delicious, kept refreshingly light by the lack of a broth. The luscious pork belly was beautifully charred, which smoky accent countered its sweet undertones.

The Black Garlic Ramen ($14.90), topped with an Ajitama ($2) and Corn ($2), was lovely, albeit forgettable. The soup base was rich and balanced, but I could hardly make out the garlic in it. That said, the rest of the components were executed perfectly.

Another must-try, was the Grilled Corn with Butter ($4.90), bursting with sweetness and imbued with a fragrant char. This was slicked with butter followed by a shower of spiced Japanese seasoning.

The icy Black Truffle Edamame ($5.90) was excellent, having been generously coated with black truffle bits. For the first time ever, I licked the hairy outer skin clean off.
