Roasted Garlic & Cauliflower Parmesan
This is yet another low-fuss side dish that's a real crowd-pleaser. The mild nuttiness of the cauliflower is complemented by the buttery roasted garlic, while a light shower of grated parmesan lends a salty pungency.
Ingredients (feeds 4 as a side dish):
600gm cauliflower, cut evenly into florets (makes abt 5 cups)
1/4 cup olive oil
20 cloves garlic, peeled
1 tsp salt
1/2 cup grated parmesan
Directions:
1) Toss cauliflower, olive oil, garlic, salt and spread it out on a baking tray. Be careful not to overcrowd the tray that it ends up steaming, instead of roasting.
2) Bake in oven at 210C for 30 minutes until soft and golden at the edges, tossing at the halfway mark.
3) Serve with a sprinkling of parmesan. For high drama, grate the parmesan block tableside with flair.
