Sloppy Joe
I was first introduced to Sloppy Joes when I was taken to a ballgame in the US. It's messy and guarantees a ruined top, saucey fingers, and slobbery mouths. BUT, it's totally delicious.
I've customised my recipe, and laced the ground beef with minced pork for a fattier finish, and topped it off with some of my favourite things, like bacon, eggs and cheese. Now, that's what I call a burger!
Ingredients (feeds 4):
4 hamburger sesame seed buns
8 strips bacon (streaky or back, up to you)
4 eggs
4 slices monterey or sharp cheddar
2 tbsp bacon fat (olive oil works in a pinch)
300 gm minced beef
100 gm minced pork belly
1 medium yellow onion, minced
2 cloves garlic, minced
1 green pepper, diced to 1cm cubes
1 cup tomato puree
1 tsp cumin
2 tsp brown sugar
1 tbsp cider vinegar
1 tsp dried thyme
Dash cayenne
1 tbsp Worcestershire sauce
1/2 cup water
Directions:
1) Fry garlic and onion in bacon fat drippings until soft and caramelised, about 5 minutes on medium-high heat.
2) Add peppers and fry till toasty, about 3 minutes.
3) Add beef.
4) Add minced pork, taking care to break them apart.
5) Add tomato puree, cumin, sugar, cider vinegar, thyme, cayenne, worchestershire and stir through. Add half a cup of water, and let it simmer till almost reduced. That's the sloppy joe part!
6) In a separate pan, grill bacon till toasty.
7) Fry egg any way you like, sunny side up, or scrambled.
8) Assemble sloppy joe, layered with bacon, a slice of cheese (the heat from the fillings will melt it through), and a egg between toasted sesame buns. This is the egg sunny side up version.
9) This is the scrambled egg version.
