Stir Fried Potatoes with Minced Meat

This is another simple dish that's great for the time-pressed. On lazy days, this alone makes for an all-in-one dish, with all the carbs and protein we need.

Ingredients (feeds 2 large eaters with nothing else, or 4 persons if paired with other dishes):
3 russet potatoes, skinned and diced (a russet potato is usually slightly bigger than a computer mouse, or about 148gm or 5.2 ounces)
1 clove garlic, minced (or put through a garlic press to save time)
150gm minced pork
Light Soy
Oyster Sauce
Ground white pepper
Sesame oil
Frying oil (use sunflower for a healthy touch or peanut oil for more flavour)

Directions:
1) Add garlic in sesame oil-frying oil combination (1 tbsp sesame oil as an accent to 2 tbsp frying oil, i.e. 1 part sesame oil to 2 parts frying oil) in pre-heated wok, and fry until fragrant.

2) Add minced pork

3) Add 1 tbsp oyster sauce and 1 tbsp light soy and a dash of ground white pepper and fry until meat is cooked through.

4) Add potatoes

5) Add 2 tbsp light soy

6) Add 1 cup water, and simmer on low heat for 10 minutes or high heat until potatoes are cooked through but not mushy. Season if necessary with additional light soy and serve piping hot!

You can try frying the potato to light brown first then stir fry with the mince pork with just a bit of gravy. Taste great too

I put dark soya light whilst browning the meat cos of the aromatic smell. Brings a bit of colour into the food too.
